Actually it's better to dress in layers, any outdoorsman you meet will tell you this. It can be as simple as a cotton t-shirt, swetashirt, and shell or as advanced as a set of polypro, some synthetic insulator (fleece or wool), and an outer shell.

Hit up MEC or another outdoors store if you're really into getting geared up properly.

1 layer is not good because you overheat and take it off then what? you freeze because you just removed what was just insulating you. Layers is the key my friend that way you're more easily able to regulate body temperature.
