Ambush scenarios are always fun if you have a wooded area. The idea is that one team has to get from point A to B following a more or less specific route, and somewhere along that path the other team can set up an ambush. I like these scenarios because they're relatively quick to play (30 minutes is usually about right), have tension for both sides, and can be played with a small number of people.
Good 'ol "Capture the Flag" scenarios are also a lot of fun, and I've thought of a few variants on them that could make them even more fun. Having said that, I've been to a few where there were some significant issues. Mainly, capture the flag games don't scale well, and it is very possible to play them on a field too large.
